I am sorry, I don't have the book but i will inform you a tiny bit about sushi:
Extended ago in ancient china, they desired a snack that was fishy but savory. A man put fish roe into seaweed and sushi was born. These days, there are significantly more ingredients in sushi, but we even now bear in mind the Chinese man who created it when we consume in nowadays.
Very good luck! ) Sydney

Sadly I dont have the book also… but hope these ideas help.
With the Nori rolls for teens, for fillings you could try…
Cucumber,
Smoked salmon with a thin layer of cream cheese,
shredded carrot,
shredded pickled ginger,
tuna with mayo,
smoked parma ham,
choritzo,
Japanese style egg omlette.
For side dishes you could have…
prawn crackers with a selection of japanese dips such as pureed ginger, cucumber in small diced squares marinated in a teriyaki sauce.
A japanese style salad with mixed beans an pulses.
Tiny marinated beef and chicken kebab skewers in teriyaki sauce with bits of thinly cut peppers.
You could also add some other things…
I like to make sweet chilli prawn kebabs -
Take a few boxes of large cooked king prawns and some peppers.Slice the peppers, wash the prawns and them put them onto kebab skewers.
Put the skewers lined up in a large metal bar b que tray and pour over a bottle or two of sweet chilli dipping sauce leave to stnd for a couple of hours and them bar b que in the metal tray for about ten mins.- Yum! I also make the teriyaki kebabs in the same way.
Good luck…
